wjat do you chaps use to keep filleting/baiting/gutting knives sharp?

I've gone through loads of filleting knives last couple of years, just can't seem to keep a good edge on em

Try one of these Mark, got one on the boat http://www.accusharp.com/ about a tenner
I always see both sides of the argument, the one that's wrong and mine.....

A good bit of seasoned hard wood is what we used to use didnt loose the edge or wear away the metal away either like a stone or a steel

Try it on a new knife nae one thats been used before and you will see the difference ,same reason as chippies seldom need to sharpen chisels

south west chandlers in girvan sell the accusharp knife sharpeners and got to admit the do a dam good job

    lidels have a small electric knife sharpener at 6 quid.hav'nt tried it but looks handy enough

We use these on the boat and they fairly keep your knife sharp, even give the serated mending knives a few rub's and it sharpens them as well.

sure he disna keep wan aboard, he's already said he disna catch any fish and he pits the net ashore for richard to mend, he hardly needs a knife for his diet of baked beans and tinned custard!!!! tho not on the same plate, ho ho ho, a wee bit of cbeebies for him!!!!

you said you never caught fish and that your faither mended your nets, out of the mooth of babes, only quoting you, or do you have undeclared landings you'd like to admit to? did you not see the official government figures? your share of the west coast quota is a third of a box of cod, two boxes of whiting and half a box of haddies, thats official!!!! you'd be landin the whiting roon and taking the haddies hame for rashers so the breed knife wid do for the six cod!!!

Just seen this one ,know it's years old, but this might help.My old dad was a shoemaker( not a cobbler). His knives were sharp enough to shave with . His secret - what he called his "whitty" board. A bit of 2" wide ,by 1" deep and approx 12" long( with a carved handle). He'd glue a bit of fine emery cloth to it and wear the surface till it shined. I've got it and it is far better than a steel (IMHO) for honing knives. Quick touch and the carving knife is fit for anything .
